Tomato Soup Recipe: Getting Your Diet Back On Track After The Holidays
I love the holiday season from Thanksgiving through New Years but sheesh, it can leave a girl feelin' like a chunky monkey (hahaha)?! You know what I mean, between the extra festivities and task you start skipping the gym. And if that doesn't do it then all those delicious indulgent meals, cocktails, hot chocolate drinks and desserts (Mmm chocolate in my Homer Simpson voice) will! Welp, now that the holidays are over it's time to get back on track with eating healthy and working out. Since I love soup and wanted to reset my diet with something warm and hearty I decided to whip up a batch of yummy tomato and kale soup. I found a recipe that sounded like it was delicious but it was spicy and she doesn't do anything spicy or hot. So I created my own version, that's perf for getting your diet back on track after the holidays and takes less than an hour to make. Cuz I know you've got other things to do besides spendin' all day in the kitchen (hello mani/pedi).
- 1 Tablespoon Avocado Oil (or oil of your choice)
- ½ Diced Onion
- ½ C Diced Carrots
- 3 Cloves of Garlic (minced)
- 4 C Chicken or Vegetable Broth
- 1 28oz Can of Crushed Tomatoes
- 1 14.5 oz Can Diced Tomatoes with Basil, Oregano & Garlic
- Chopped Kale
- ¼ Teaspoon Dried Oregano
- ¼ Teaspoon Dried Basil Or a couple leaves of chopped fresh
- 2 Tablespoons of Fresh Parsley Chopped
- Black Pepper
- Salt (It's optional but I used Pink Himalayan Salt)
Let's Make It Happen
- Add about 1 tablespoon of oil and diced carrots (I added a sprinkle of salt) to a large pot, heat on medium and sauté for about 10 minutes or until they are done to your liking. Then add the onions and cook until they are clear about 2 more minutes.
- Add minced garlic and cook for another 1-2 minutes.
- Add broth, crushed and diced tomatoes to the pot and bring to a boil. Reduce to a simmer, add dried oregano and basil, season with salt and pepper if you like then simmer for about 25 minutes. Don't worry if your soup seems a lil' thin at first, it'll start to thicken as it simmers!
- Now stir in the chopped kale and continue to simmer for a few more minutes to cook the kale. Enjoy!
